These soft, sweet cinnamon rolls are filled with a fruity twist using Bards Tea Jelly Forest Berry jelly. The result is a delightful balance of cinnamon warmth and bright berry flavor.
Ingredients
Dough:
- 3/4 cup warm milk (110°F/45°C)
- 1 packet (2 1/4 tsp) active dry yeast
- 1/4 cup granulated sugar
- 1 large egg + 1 egg yolk, room temperature
- 1/4 cup unsalted butter, melted
- 3 1/2 cups all-purpose flour
- 1/2 tsp salt
Filling:
- 1/2 cup Bards Tea Jelly Forest Berry
- 1/4 cup unsalted butter, softened
- 1/3 cup brown sugar
- 1 1/2 tsp cinnamon
Glaze:
- 1 cup powdered sugar
- 2-3 tbsp milk
- 1/2 tsp vanilla extract
Instructions
1. Make the Dough:
- In a bowl, mix the warm milk, yeast, and 1 tablespoon of sugar. Let it sit for 5-10 minutes until it becomes frothy.
- Add the remaining sugar, egg, egg yolk, and melted butter. Mix until combined.
- Gradually add the flour and salt. Stir until a dough forms, then knead on a floured surface for 6-8 minutes until smooth.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-2 hours, or until it doubles in size.
2. Prepare the Filling:
- In a bowl, mix the softened butter, brown sugar, and cinnamon.
- Warm the Bards Tea Jelly Forest Berry slightly to make it easier to spread (but don’t let it become runny).
3. Assemble the Rolls:
- Roll out the dough into a 12×18-inch rectangle.
- Spread the cinnamon-sugar butter mixture evenly across the dough.
- Gently spread the warmed Bards Tea Jelly Forest Berry over the butter layer.
- Roll the dough tightly from the longer edge to create a log. Cut into 12 even pieces.
4. Bake the Rolls:
- Place the rolls in a greased 9×13-inch baking dish, leaving a little space between them.
- Cover and let them rise for 30-45 minutes until puffy.
- Preheat the oven to 350°F (175°C).
- Bake for 25-30 minutes, or until golden brown.
5. Glaze and Serve:
- While the rolls cool slightly, whisk together powdered sugar, milk, and vanilla extract to make the glaze.
- Drizzle the glaze over the warm cinnamon rolls.
Enjoy these berry-filled cinnamon rolls with your morning coffee or as an indulgent dessert!
