Cinnamon Rolls with Bard’s Tea Jelly Forest Berry Filling

These soft, sweet cinnamon rolls are filled with a fruity twist using Bards Tea Jelly Forest Berry jelly. The result is a delightful balance of cinnamon warmth and bright berry flavor.

Ingredients

Dough:

  • 3/4 cup warm milk (110°F/45°C)
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/4 cup granulated sugar
  • 1 large egg + 1 egg yolk, room temperature
  • 1/4 cup unsalted butter, melted
  • 3 1/2 cups all-purpose flour
  • 1/2 tsp salt

Filling:

  • 1/2 cup Bards Tea Jelly Forest Berry
  • 1/4 cup unsalted butter, softened
  • 1/3 cup brown sugar
  • 1 1/2 tsp cinnamon

Glaze:

  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

1. Make the Dough:

  1. In a bowl, mix the warm milk, yeast, and 1 tablespoon of sugar. Let it sit for 5-10 minutes until it becomes frothy.
  2. Add the remaining sugar, egg, egg yolk, and melted butter. Mix until combined.
  3. Gradually add the flour and salt. Stir until a dough forms, then knead on a floured surface for 6-8 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-2 hours, or until it doubles in size.

2. Prepare the Filling:

  1. In a bowl, mix the softened butter, brown sugar, and cinnamon.
  2. Warm the Bards Tea Jelly Forest Berry slightly to make it easier to spread (but don’t let it become runny).

3. Assemble the Rolls:

  1. Roll out the dough into a 12×18-inch rectangle.
  2. Spread the cinnamon-sugar butter mixture evenly across the dough.
  3. Gently spread the warmed Bards Tea Jelly Forest Berry over the butter layer.
  4. Roll the dough tightly from the longer edge to create a log. Cut into 12 even pieces.

4. Bake the Rolls:

  1. Place the rolls in a greased 9×13-inch baking dish, leaving a little space between them.
  2. Cover and let them rise for 30-45 minutes until puffy.
  3. Preheat the oven to 350°F (175°C).
  4. Bake for 25-30 minutes, or until golden brown.

5. Glaze and Serve:

  1. While the rolls cool slightly, whisk together powdered sugar, milk, and vanilla extract to make the glaze.
  2. Drizzle the glaze over the warm cinnamon rolls.
